Why do some beans in this blend look really dark?
*Decaf coffee beans often appear darker than their regular counterparts due to the decaffeination process. This process, regardless of the specific method used, often alters the beans' cellular structure, leading to a darker hue. The solvents or water used can strip away certain compounds while leaving others intact, inadvertently emphasizing the bean's natural dark pigments. Furthermore, decaffeinated beans are more porous, which can lead to a darker appearance post-roasting as they absorb more heat, quickening the reactions that contribute to the color change.
