About the author

Santiago Lastra was born in Mexico City and raised in Cuernavaca. After working in acclaimed kitchens including Mugaritz and Noma, he opened KOL in London in 2020, earning a Michelin star for his approach to Mexican cooking with seasonal British ingredients. Mexican Soul is his first cookbook.
